Toasted Cashew and Coconut Butter

I am completely obsessed with nut butters (my fave has to be almond hehe) and am always spending SO much money on them! So i thought it would be much cheaper and also very easy to make my own! But i wanted to so something a bit more exciting than just almond or peanut butter so decided to go with cashew and coconut!
Nuts have so much more flavour when roasted and so does coconut, giving this toasted cashew and coconut butter sooo much flavour! Its super smooth yet still has a bit of texture from the coconut. This one also reminds be a bit of white chocolate or coconut rough! SO good.

Ingredients:
- 1 1/2 cups cashews
- 1 1/4 cup coconut flakes/chips
And thats all!
Instructions:
1. Preheat your oven to 180 degrees celsius and begin by roasting your cashews for around 7 minutes and your coconut for 4 minutes. Once roasted, leave to cool.
2. Once your nuts and coconut have completely cooled down, add to a food processor. Blend for around 10 minutes or until smooth. Transfer to a jar and keep in the pantry.

You can use this nut butter in so many different ways, but i thought i would list a few of my favourite ways to give you some ideas!:
- on toast or rice cakes with banana
- on banana bread
- served with overnight oats or regular porridge
- in a smoothie
- drizzled over fruit and yoghurt
- incorporate it in a slice
