Tahini Choc Chip Cookies

Now this is a recipe you don't want to miss! These cookies are super super yummy and are a different take on your classic choc chip ones. The inside is nice and soft with a firm crunchy outside; as well as a perfect amount of tahini!

Ingredients:
- 1 cup almond meal
- 3/4 cup spelt flour (can also use oat or buckwheat)
- 1/3 cup solid coconut oil
- 1/2 cup coconut sugar
- 1/3 cup tahini
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- Choc chips

Instructions:
1. Pre heat the oven to 180 degrees celsius
2. In a large mixing bowl, add in the coconut oil, coconut sugar, tahini and vanilla extract. Using an electric mixer, mix until everything is combined
3. Add in the rest of your ingredients (besides the choc chips) and mix again until combined. You may need a spoon to mix things together at the end. Mix in your choc chips with a spoon.
4. Roll into balls and flatten into cookies. Bake in the oven for 12-15 minutes or until golden.
