Sweet Pumpkin & Pesto Tacos

I made these the other night and can already tell that they are going to be on repeat! These tacos are bursting with so many yummy flavours and textures! They are also super easy to make, don't require many ingredients and don't make a big mess in the kitchen - it's a win-win in my opinion!



Ingredients:

- Soft taco shells

- 2 cups/450g chopped pumpkin

- 3 small sweet capsicums (or 1 of a normal red capsicum)

- 1/2 Red onion

- 1 small courgette

- Roughly chopped lettuce

- A small amount of chopped cucumber

- Pesto

- Juice of 1/2 a lemon

- 2-3 tbsp coconut aminos

- 1-2 tbsp maple syrup



Instructions:

1. Preheat your oven to 200 degrees celsius while you chop your veggies

2. Chop your pumpkin, capsicum, red onion and courgette into small chunks.

3. Now make the coating for your veggies by mixing together the lemon juice, coconut aminos and maple syrup. The amount you need will depend on the amount of veggies you need to coat. Mix this mixture with all of your veggies and place in the oven. Leave in for 25-35 minutes or until golden. (you may need to take the courgette, red onion and capsicum out first).

4. Once your veggies are cooked you can assemble your tacos. Place your chopped lettuce and cucumber on the bottom and top with your cooke veggies and a few dollops of pesto and enjoy!
