Summer Granola

There is honestly nothing better than freshly made granola! I never buy granola or muesli from the store anymore as i think homemade ones are just so much better and you can always mix up the ingredients. It's also super easy to make and works out to be a lot cheaper so it's a win-win really!
This granola is perfect for summer as it is so light and tasty! It pairs perfectly with fresh fruit and yoghurt, chia pudding or used as a topping for smoothie bowls, porridge or overnight oats!


Ingredients:
- 1/2 cup rolled oats
- 1/2 cup buckwheat
- 2 cups puffed grains (i used a mix)
- 1 cup cashew pieces/chopped cashews
- 1/2 cup slivered almonds
- 1/3 cup goji berries
- 1/4 cup desiccated or shredded coconut
- 3 tbsp maple syrup
- 1/2 cup cashew almond butter (can just use plain cashew or plain almond butter but i thought i would use a mix!)
- 2 tsp vanilla extract
- 1 tsp cinnamon
Instructions:
1. Preheat your oven to 160 degrees celsius
2. Place all of your dry ingredients (minus the puffed grains, coconut and goji berries) into a bowl and mix together
3. In a seperate bowl, mix 1/4 cup of your nut butter (saving the other half for the end) with your maple syrup and vanilla until combined. Pour this over your dry granola mixture and mix well to make sure everything is evenly coated. Place this in the oven for 20-25 minutes or until golden. Mix 2-3 times throughout
4. Add your puffed grains and coconut to the mix and keep this in the oven for a further 5 minutes. Take out and mix in your goji berries along with the other half (1/4 cup) of your nut butter. Again, make sure everything is evenly coated. Leave this on the tray to cool and store in an airtight container! Enjoy!
