Spiced Banana, Oat & Raisin Loaf

A little spin on your classic banana bread! This banana loaf is absolutely delicious with the added ingredients of cinnamon, ginger, nuts and raisins! Perfect to have toasted/warmed on a cold winters morning with butter, peanut or almond butter or just by itself as it's got so much flavour and textures going on and is super moist! You could also make this mix into muffins to make it easier to have on the go!

Ingredients:

  • 2 cups oat flour (ground up oats - could also use another flour such as almond, buckwheat or wholemeal but the texture may be slightly different)

  • 2 large ripe bananas, mashed

  • 2 eggs

  • 1/4 cup maple syrup

  • 1/4 cup coconut oil, melted

  • 1 tsp vanilla extract

  • 3 tsp cinnamon

  • 2 tsp ground ginger

  • 1 tsp baking powder

  • Pinch of salt

  • 1/4 cup milk of choice (I used oat)

  • 1/2 cup rolled oats

  • Handful of chopped walnuts and pecans (or your choice of nuts)

  • 1/4 - 1/3 cup raisins or another dried fruit

Instructions:

  1. Pre heat your oven to 180 degrees celsius

  2. In a large mixing bowl, mix all of your dry ingredients (flour, cinnamon, ginger, baking powder and salt)

  3. In a seperate bowl, mix together your wet ingredients (mashed banana, eggs, maple syrup, melted coconut oil, vanilla extract and milk). Once well combined, add this wet mixture to your dry ingredients and mix. Fold in your rolled oats, nuts and raisins at the end.

  4. Pour your mixture into a lined baking loaf tin. Top with extra nuts and/or raisins if you want. Bake in the oven for 45-50 minutes.

  5. Allow to cool in the tin for 10 minutes before moving onto a wire. Let the loaf cool completely before slicing. Keep stored in a bread bag or container in the fridge. Enjoy!
