Savoury Zucchini Muffins

I have always been one for sweet muffins but oh my these savoury zucchini ones are next level! Packed full of flavour, light, fluffy and the best texture with the zucchini, red onion, feta & sesame seeds! They are also super easy to make so definitely recommend giving these a go! Hope you enjoy!

Ingredients:
- 2 cups besan/chickpea flour
- 2 eggs
- 2 small-medium zucchinis
- 1 cup milk of choice (I used almond)
- 1 tsp Italian or mixed herbs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp coriander seeds
- Salt and pepper
- 1 tsp baking powder
- 1/2 red onion, finely diced
- Your choice of toppings. I used feta and sesame seeds
Instructions:
Preheat your oven to 180 degrees celsius and line muffin tins
Grate your zucchini and squeeze all of the liquid out of it. You can do this by putting your zucchini into a nut milk bag or tea towel and squeezing out as much liquid as you can
In a large mixing bowl, mix together the eggs, zucchini, red onion, milk and seasonings. Once combined, add in the rest of your ingredients (flour and baking powder) and mix well.
Pour your muffin mixture into your muffin tins and top with your toppings of choice
Place in the oven and bake for 20-25 minutes or until a skewer comes out clean
