Satay Tofu Skewers

I am so happy with how this recipe turned out! I always love trying out new things and especially with tofu as there is so much you can do with it. And this would have to be my favourite tofu creation so far! It doesn't require many ingredients and doesn't take very long. It is also super yummy and it even got a tick of approval from the non-tofu lovers in my household!! So let's get straight to it!

Ingredients:
- 1 block of extra firm tofu
- 3 tbsp peanut butter
- 2 tsp red curry paste (i used Exotic Foods!)
- 3 tbsp coconut aminos or tamari
- Juice of 1/2 a lime
- 1 tbsp coconut or almond milk
Instructions:
1. Begin by squeezing all of the liquid out of your tofu. I like to rest something heavy on top of the tofu and leave it for around 10-15 minutes to ensure most of the liquid is out.
2. Now prepare your satay sauce. Mix all ingredients together in a bowl.
3. Cut your tofu into large chunks and place in the bowl of satay sauce, ensuring that every piece of tofu is covered. Leave this to sit for at least 15 minutes so it can absorb the flavour (I like to leave it for half an hour if i have the time).
4. Once your tofu has marinated, put your chunks onto skewers! I had around 5 squares on each skewer.
5. Now heat a pan on a low to medium heat and cook your skewers on all sides until golden. I have served mine with slaw, baked kumara and fresh veggies. Enjoy!
