Satay Tofu Buddha Bowls

If you haven't tried tofu yet and are wanting to but aren't sure because it can sometimes be so flavourless ... give this recipe a go!! There is plenty of flavour and everything in the bowl pairs together so well. Feel free to add any other veggies such as charred broccoli or some cauliflower! The satay flavour surprisingly goes well with such a range of food!

Ingredients:
For the tofu:
- 1 block of firm tofu
- 2 heaped tbsp peanut butter (I used a spiced/savoury peanut butter. You could also add smoked paprika and cayenne pepper to the mix!)
- 2 tbsp lime juice
- 5 tbsp coconut aminos
- 2 tsp honey or maple
- 1 tsp fresh ginger
- Pepper to taste
For the bowls:
- Slaw mix with lime juice and coconut aminos
- Swiss brown mushrooms cooked in leftover satay sauce and/or coconut aminos
- Fresh veg of your choice. I used cucumber, tomato, red onion, beetroot and avocado
Instructions:
1. Begin by prepping your satay sauce and tofu. For the satay, mix together all of your ingredients in a bowl. For the tofu, begin by squeezing out the liquid with paper towels or a cloth and cut into chunks. Place this into a seperate bowl and coat in your satay sauce (I saved some for the mushrooms). Place this aside and soak for as long as you can. Preheat your oven to 200 degrees celsius.
2. Now prep your slaw and veggies. For the slaw, coat in lime juice and coconut aminos. Cut your veggies into whatever shapes and sizes you like.
3. After your tofu has been soaked, place in the oven for 20-25 minutes or until crispy.
4. While your tofu is cooking, cook your mushrooms on a pan in leftover satay sauce and/or coconut aminos.
5. Now assemble your bowls! I used a base of spinach and added everything on top. I had enough for leftovers and it's equally as nice for lunch the next day!
