Salmon Tacos with Avocado Salsa

These tacos are super light, fresh and yummy! Made with few, simple and fresh ingredients that work together so well! Definitely recommend giving them a go and adding in your own little twist if you like with any other yummy ingredients!

Ingredients:
- 1 fillet of salmon (seasoned with salt and pepper)
- Crunchy lettuce
- Cucumber and any other fresh ingredients you would like
- Aioli or any dressing you like!
Salsa:
- 1/4 - 1/2 an avocado, cut into squares/chunks
- 1/2 a large tomato, diced
- 1/2 a red onion, diced
- 1 chilli
- Handful of fresh herbs (I used coriander and parsley)
- Juice of 1/2 a lime
- Salt and Pepper

Instructions:
1. Preheat your oven to 200 degrees celsius and place the salmon in the oven for around 20 minutes (seasoned with salt and pepper)
2. While your salmon is cooking, cut up all of your veggies for the tacos.
3. Once your taco veggies are prepared, cut your avocado, tomato and red onion into small chunks and add to a bowl with the rest of your salsa ingredients.
4. Once your salmon is cooked (make sure you avoid any salmon bones) , assemble your tacos and drizzle with your choice of dressing
