Roast Almond Choc Chip Cookies

Quite a mouthful of a name but these cookies are absolutely delicious! They are super easy to make and will be a family favourite for sure.
The roast almonds and almond butter in these cookies take your normal choc chip cookies to the next level. As well as the crunch of the roasted almonds paired with the smooth dark chocolate. These bad boys just melt in your mouth!

Ingredients:
- 1 cup almond meal
- 3/4 cup buckwheat flour
- 1/3 cup coconut sugar
- 1 large egg
- 1/4 cup coconut oil, melted
- 3 tbsp almond butter
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 cup chopped almonds, roasted for 5mins
- 50g - 100g dark chocolate, depending on how much you want or chocolate chips
Instructions:
1. Begin by preheating your oven to 180 degrees celsius and roasting your chopped almonds for around 5 minutes. Keep an eye on them. Take out and allow to cool.
2. Now begin your cookies by mixing the flours and baking powder together.
3. In a seperate bowl mix together the melted coconut oil, egg, coconut sugar, almond butter and vanilla extract. Once combined, add to your dry ingredients and mix together to form a dough. Now add in your roasted almonds and dark chocolate/chocolate chips.
4. Form your dough into 9 balls and flatten onto a lined baking tray. Place in the oven for 8 - 12 minutes until golden. Allow to cool/harden for 5 - 10 minutes.
