Peanut Butter Popcorn Slice

I can't even begin to tell you how yummy this slice is!!! It is also SUPER easy, requiring only 5 ingredients and it takes about 10 minutes to whip up! Its perfect to have in the fridge/freezer and won't leave you feeling sick if you eat a bit too much (it's hard just eating one piece!) because it is so light. Let's get straight to the recipe because it's a goodie!

Ingredients: - 4 cups popcorn
- 1 cup puffed rice/rice crispies
- 1 cup peanut butter (i used crunchy for some more texture)
- 1/2 cup coconut oil, melted
- 1 tsp vanilla extract
Instructions:
1. Mix your popcorn and puffed rice together in a big bowl.
2. Mix together your melted coconut oil, peanut butter and vanilla extract. Pour this into your popcorn mixture and mix well! Make sure everything is coated.
3. Press this mixture tightly into a dish and place in the freezer to set. Store in the fridge or freezer as it will melt if you leave it out for too long. Enjoy!
