Peanut Butter Caramel Slice

I love both peanut butter and caramel so this is a winning combo! I always have so much fun creating different flavour combos but this has to be one of my favourites. It's smooth yet crunchy with the peanuts on top and will definitely satisfy all you peanut butter and caramel fans (like myself)!



Ingredients:

Base:

- 1 cup almond meal

- 1/2 cup rolled oats

- 3 tbsp peanut butter

- 5 medjool dates, soaked in boiling water

- 1 tsp vanilla extract


Filling:

- 11 medjool dates, soaked in boiling water

- 1/4 cup peanut butter

- 1 tsp vanilla extract


Topping:

- 1/2 cup crushed peanuts



Instructions:

1. Begin with you base and add the almond meal and rolled oats to a food processor. Blend into a flour. Once blended, add in the rest of your ingredients and blend until combined. Press this mixture into a tray and place in the fridge while you make your filling.

2. Add all of your filling ingredients to a food processor and blend until smooth. You may need to add in some of the water from your soaked dates. Spread this mixture on top of your base and top with your crushed peanuts. Place back into the fridge to set. Once set, slice into squares and keep stored in the fridge.
