Peaches & Cream Baked Oats

Baked oats take oats to a whole new level - it's just the same ingredients + baking powder (key ingredient to make it cakey) and is baked instead of done in the microwave or on the stove! Definitely recommend giving this method a go - you won't regret it!

Ingredients:

  • 1/3 cup rolled oats

  • 1 tbsp chia seeds (can skip this and do 1/2 cup of rolled oats also)

  • 2/3 cup plant based milk (I used oat but coconut would also be really nice)

  • 1/2 tsp vanilla extract

  • Dash of maple syrup (or your sweetener of choice)

  • 1/2 mashed banana

  • 1 tsp baking powder

  • 1 peach

Instructions:

  1. Preheat the oven to 180 degrees celsius

  2. Mix the mashed banana, milk, vanilla extract and baking powder together in a bowl

  3. Add the rolled oats and chia seeds to this bowl and mix until everything is combined. Pour your oats into ovenproof dish and top with half of your sliced peach. Bake for 25 to 30 minutes.

  4. Serve in a bowl with the other half of the peach and any other toppings you like! Enjoy!
