PBJ Bars

If you like peanut butter, berries, chocolate and easy recipes then this is the perfect recipe for you! These PBJ bars are super yummy, require minimal ingredients and is super easy to make. Perfect to have in the fridge as a quick snack - hope you enjoy!

Ingredients:
2 cups almond meal (ground almonds)
1/2 cup smooth peanut butter
2 tbsp maple syrup or any other liquid sweetener
1 tsp vanilla extract (optional)
Pinch of salt
2 tbsp jam of choice (optional)
Around 1 cup frozen raspberries
80g dark chocolate, melted

Instructions:
Using a high speed blender or food processor, blend together your almond meal, peanut butter, maple syrup, vanilla extract and salt into a sticky dough forms. Press this mixture into a lined tray. You could also just mix this together in a bowl using a spoon or your hands!
Spread your jam on top of your peanut butter mixture. Then spread your berries on top of this. Place this in the fridge or freezer for around 10 minutes.
While your bars are in the fridge/freezer, melt your chocolate. Drizzle this on top of your PBJ base and place back in the fridge/freezer until set. Once set, cut into little bars and keep stored in an airtight container in the fridge. Enjoy!
