PB, Coconut & Lemon Slice

This may not sound like a combo you would usually go for but it's definitely one that tastes better than it sounds! These flavours complement each other perfectly without being too strong of only one of the flavours. It is a super yummy and fresh treat to have in the fridge is perfect for morning tea or an after dinner snack!

Ingredients
- 1 cup desiccated coconut
- 3/4 cup peanut butter (I used Fix and Fogg smooth)
- 1/2 cup rolled oats
- 6 large medjool dates
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- Pinch of salt
Instructions
1. Begin by blending all of your dry ingredients together (coconut, rolled oats and salt) until it is mostly ground up
2. Add the rest of your ingredients into the blender/food processor and blend until everything is fully combined
3. Press this mixture into a lined fish and feel free to top with peanuts, coconut and lemon zest. Place this in the fridge to set
4. Cut into squares once fully set and keep stored in an airtight container in the fridge. Enjoy!
