On-the-go Snacks - Sweet Edition

Now that i'm back at uni i am needing lots of snacks to keep me going through the day! So i have decided to dedicate some blog posts to snacks! As you can already tell by the title, this one is for sweet snacks but i will be doing savoury and also lunch ideas to bring on the go (this can be for school, work, uni or if you're travelling somewhere)! So let's get straight to the yummy recipes.
Single Serve Choc Chia Pudding
Ingredients
- 1 tbsp chia seeds
- 1 tsp cacao powder
- 1/3 cup almond milk (or your choice of plant milk)
- 1/2 - 1 tsp maple syrup
- Optional toppings: yoghurt, fruit, granola, nut butter
Instructions
1. Add your chia seeds and cacao powder into a jar, mixing them together
2. Add in your milk and maple syrup and mix together well until everything is combined and there are no lumps (pro tip: use a fork or mini whisk)
3. Set this in the fridge overnight, ready for the next day. Top with whatever you feel like!
Yoghurt Coated Rice Cakes
Ingredients
- Rice cakes (I use Ceres Organics brown rice cakes) (Use however many you want)
- Your choice of yoghurt (to dip your rice cakes into)
- Your choice of toppings: melted dark choc, cacao nibs, goji berries, raisins, granola, nut butter, cinnamon.
Flavours (that i have chosen to do) and Instructions
- Cinnamon Donut; yoghurt and cinnamon
- PBJ; yoghurt, peanut butter, goji berries and freeze dried raspberries
- Choc Chunk; chocolate of choice, cacao nibs
1. Spread your yoghurt on top of your rice cakes and then top with your selected toppings. Make sure to push your topping into the yoghurt so that they stick and don't fall off
2. Place these in the freezer for around half an hour to set. Either keep them stored in the freezer or in the fridge and take out whenever you need.
Crunchy Nut Butter bliss Balls
Ingredients
- 1 cup roasted cashews + a few extra to crush into the mixture at the end
- 1/2 cup rolled oats
- 1/4 cup nut butter (I used almond)
- 6 large medjool dates (softened)
- 1 tsp vanilla extract
- 2 tbsp puffed quinoa
- 1 tbsp buckwheat
Instructions
1. Begin by blending your roasted cashews and rolled oats together until the are ground up (a few chunks is okay!!)
2. Now add in the dates, almond butter and vanilla extract. Blend until everything is combined
3. Mix in (don't blend!) the puffed quinoa, buckwheat and the extra crushed up cashews into the mixture with a spoon until mixed throughout the bliss ball mixture
4. Roll your mixture into balls and keep stored in the fridge, ready to go whenever you need!
Nut butter & Fruit
Ingredients
- 1 apple
- As much nut butter as you want! (I love almond and peanut)
Sweet Trail Mix
Ingredients
- 1/3 cup each of roasted cashews, almonds, pecans, walnuts and brazil nuts
- Goji berries
- Freeze dried raspberries
- Chocolate coated almonds or chocolate chunks
- Cacao nibs
Instructions
1. Pre heat your oven to 180 degrees celsius
2. Roast the nuts until golden. Allow to cool fully before mixing with other ingredients
3. Mix all of the ingredient together and keep stored in a jar or air tight container
