Nutty Apricot Granola

Homemade granola is the way to go - you can use any ingredients you like, you know exactly what's going into it, it tastes delicious and makes your kitchen/house smell amazing! Every time i make a new granola it becomes my new favourite and it's no different with this one. I have always been a fan of raisins in my granola but i think i may have been converted to apricots with this delicious granola recipe so definitely recommended giving this recipe a go. Enjoy!

Ingredients:
- 1/2 cup rolled oats
- 1/2 cup buckwheat
- 1/2 cup slivered almonds
- 2 cups chopped nuts (I used cashews, walnuts, pecans and brazil nuts)
- 2 tbsp sunflower seeds
- 2 tbsp pumpkin seeds
- 2 tsp cinnamon
- 2 tsp vanilla extract
- 3 tbsp maple syrup or another liquid sweetener
- 2 tbsp melted coconut oil
- 2 tbsp almond butter
- 3/4 cup chopped apricots
Instructions:
Preheat your oven to 160 degrees celsius and line a baking tray
In a large mixing bowl, mix together all of your dry ingredients besides the apricots (oats, buckwheat, nuts, seeds and cinnamon)
In a small bowl, mix together your dry ingredients (melted coconut oil, maple syrup, almond butter, vanilla extract and salt). Add this to your dry ingredients and mix well until everything is coated evenly.
Spread evenly on the lined baking tray and bake in the oven for around 25 minutes or until golden.
Once it is fully baked, remove from the oven and mix in the chopped apricots. Allow the granola to cool fully before adding it to an airtight jar/container. Enjoy!
