Nut Butter Cookies

Actually obsessed with how these cookies turned out! They are so delicious, made from good ingredients, are super easy to make and have a lot of delicious chocolate chunks! Definitely recommend giving them a go to have as a little treat in the house - perfect for an afternoon pick-me-up or as dessert!

Ingredients:

- 1/2 cup nut butter (I used Fix and Fogg's limited edition almond cashew maple butter! But any will work just make sure its smooth)

- 2 tbsp coconut oil, melted

- 2 tbsp maple syrup

- 1 tsp vanilla extract

- 3/4 cup rolled oats

- 1/2 cup almond meal (ground almonds) or oat flour (ground oats)

- 1 tsp baking powder

- Pinch of salt

- 1 tbsp milk of choice (I used oat)

- Dark chocolate

Instructions:

  1. Preheat your oven to 180 degrees celsius

  2. In a large mixing bowl, mix together your wet ingredients (nut butter, melted coconut oil, maple syrup, vanilla extract and milk)

  3. Once your wet ingredients are well combined, mix in the rest of the ingredients (besides the chocolate). Stir the chocolate chips in at the end.

  4. Roll your mixture into balls and flatten onto a lined baking tray

  5. Bake in the oven for 10 minutes or until golden

  6. Leave the cool on the tray for at least 10 minutes (to allow them to harden - they will be soft when you take them out), then move to a cooling wire. Keep stored in an airtight container.
