Mocha Slice

I absolutely love this mocha slice i get from a cafe near my uni called 'Revive' but as i'm now on my summer holiday i don't think i'll be making the trip in just for the slice so decided i'd try and recreate my own! I am so so happy with how this turned out and i even gave it more of a boost with coffee because i just love the flavour so much!
The base is made up of roasted cashews, dates and almond butter, making up such a nice texture that pairs so well with the smooth mocha chocolate top! It's super easy to make and doesn't require too many ingredients so if you want to make your life 10x better then i definitely recommend giving this recipe a go!

Ingredients:
Base:
- 1 3/4 cup roasted cashews
- 1 cup medjool dates (make sure they are soft!)
- 3 tbsp almond butter
- 1 tsp vanilla extract
- Pinch of salt
Mocha Chocolate:
- 80g dark chocolate
- 1/2 cup coconut cream
- 2 tbsp coffee granules
- 2 tbsp almond butter

Instructions:
1. To make your base, add in the cashews and blend to break up your cashew pieces. Once a chunky flour texture has been created, add in the rest of your base ingredients and blend until combined. Press this mixture into a tray and place in the fridge.
2. For your mocha chocolate topping, heat your coconut cream in a pot on a low-medium heat until simmering. Once it is simmering, turn the heat off and add your chocolate to the pot. Allow this to sit for a few minutes before adding in your coffee and almond butter and mixing. Once this mixture is well combined, pour on top of your base layer and place in the freezer to set. Keep this stored in the fridge or freezer as the chocolate will melt fast.
