Mocha Choc Chip Cookies

Cookies are one of the best treats to have in the house and i love to have lots of different flavours! It's no secret that i LOVE coffee to i've decided to make these mocha choc chip cookies - and i'm so glad i did! They didn't last very long in the household so i'm sure they will be just as popular in yours! Hope you enjoy!

Ingredients:
- 1 cup almond meal
- 1/2 cup spelt flour (could also use buckwheat)
- 3 tbsp cacao powder
- 1/2 cup coconut sugar
- 1/3 cup solid coconut oil
- 1/4 heaped cup almond butter
- 2 tsp instant coffee mixed with 2 tbsp water (could also use 1 shot of coffee or 2 tbsp filtered coffee depending on how strong you want it)
- 2 tsp vanilla extract
- 1/2 tsp baking power
- 1/2 tsp baking soda
- Pinch of salt
- Choc chips to mix in (however many you want)

Instructions:
1. Pre heat the oven to 180 degrees celsius
2. In a large mixing bowl, add in the solid coconut oil, coconut sugar, almond butter, coffee and vanilla extract. Using an electric mixer, mix until everything is combined
3. Add in the rest of your ingredients (besides the choc chips) and mix again until combined. You may need a spoon to mix things together at the end. Mix in your choc chips with a spoon.
4. Roll into balls and flatten into cookies. Bake in the oven for 12-15 minutes
