Mexican Lentil Balls

I love Mexican and these lentil balls are such a fun way to mix things up! They are a new take on Mexican and you can serve them with any of your favourite Mexican dishes. They are super easy to make and honestly taste so good! You can get creative with what you put in these and what you serve them with! They also don't have to be Mexican if you don't want!! Simply just add in whatever spices you fancy and enjoy!



Ingredients:

- 1 can brown lentils

- 1/2 red onion, diced

- 1 carrot, grated

- 3 tsp garlic

- 1 tbsp smoked paprika

- 1/2 tsp cayenne pepper

- 3 tsp mixed herbs

- 1 tsp cumin

- 1 tsp ground coriander

- 2 tbsp buckwheat flour

- Salt and pepper to taste



Instructions:

1. Preheat your oven to 200 degrees celsius, wash your lentils and prepare your veggies

2. Put all ingredients together in a food processor and blend until everything is combined.

3. Roll your mixture into balls and place on a baking tray. Place in the oven for around 25 minutes or until golden. Serve how you like! I served them in lettuce cups with a slaw mix and avocado! Enjoy!
