Mexican Bowls

You can't go wrong with Mexican and you definitely can't go wrong with these Mexican bowls!! These are super versatile and you can adapt the recipe to suit everyone as well as mix up the ingredients you serve it with! It doesn't take long to make and it is a good recipe if you are into meal prepping.


This recipe serves up to 4 people but if it's just you, then you can easily have it for leftovers and meal prep for the week. It taste just as good!



Ingredients:

For the mince:

- 400g beef mince (can swap to another mince or a mix of beans if you are vegetarian/vegan!)

- 1 brown onion

- 1 small carrot, grated

- 1 red capsicum, cut into small squares

- A handful of swiss brown or button mushrooms, chopped into quarters

- Olive oil to sauté with

- 1 tbsp coriander seeds

- 1 tbsp smoked paprika

- 1 tbsp cumin

- 1 tbsp mixed herbs

- 1 tsp cayenne pepper

- Red chilli


To serve:

- Cos lettuce

- Cherry tomatoes

- Cucumber

- Red onion

- Fresh coriander

- Avocado

- Chilli flakes



Instructions:

1. Begin by preparing all of your veggies and salad.

2. Now sauté your brown onion on a pan with oil and your coriander seeds for 2-3 minutes. Add in your capsicum, mushrooms, carrot and the rest of your spices. Sauté for another 3 minutes on a low to medium heat.

3. Add in your mince and cook until the meat is cooked through.
