Marinated Salmon Poke Bowl

Poke bowls are super yummy and an awesome way to up your veggie intake for the day as you can basically add in whatever you have in the fridge! This one is especially yummy because of the marinade. And if you don't like salmon the marinade would also pair really well with tofu or chicken!

Ingredients

- 1 medium/large salmon fillet

- Large handful of spinach

- Handful of swiss brown mushrooms

- 1/2 yellow capsicum

- A few stalks of broccolini

- 1 courgette, spiralized

- Cucumber, sliced

- Beetroot, chopped into small squares

- Optional: seaweed salad (I got mine from a sushi shop)


Marinade

- 3 tbsp coconut aminos or tamari

- 1/2 tbsp honey

- 1 tsp sesame oil

- 1 tsp minced ginger

- 1 tsp minced garlic


Instructions

1. Begin by chopping all of your veggies, setting aside when done.

2. Add all of your marinade ingredients into a bowl and mix.

3. Cut your salmon in small chunks and add as much marinade as you want on top of this, making sure all the pieces are coated.

4. On a small pan, cook your mushrooms, capsicum and broccolini with coconut aminos or any leftover marinade.

5. When your veggies or cooking (or when they're done) add your salmon to a pan and cook until evenly cooked through.

6. Once everything is cooked, assemble your bowls and enjoy straight away!
