Maple Tempeh Winter Salad

Winter salads are my favourite! Usually when people think of salads they just think of lettuce (or 'grass') and not so filling ingredients, but you can literally add anything you like! Winter ones are the best too because they are filled with warm, hearty veggies which i absolutely love!


This tempeh salad is one i have been having a lot recently and decided i had to share the recipe! It's also an easy one to meal prep for the week, so lets get to it!



Ingredients:

For the tempeh:

- 1 block of tempeh

- 2 tbsp maple syrup

- 2 tbsp coconut aminos or tamari

- 1/2 lemon, juiced

- 2 tsp apple cider vinegar


For the salad:

- 1 large handful of spinach or whatever base you would like

- 1 beetroot

- 1 courgette,

- 5 - 6 swiss brown mushrooms

- 4 - 5 asparagus stalks

- Olive oil to cook your veggies with

- Salt and pepper

- Optional toppings: pumpkin seeds, sunflower seeds, chilli flakes, roasted nuts



Instructions:

1. Begin by prepping your tempeh. In a bowl add all of the dressing ingredients together. Chop your tempeh into cubes and place in the bowl with the dressing. Make sure the tempeh is coated evenly. Set aside to allow the tempeh to absorb the flavour.

2. Now chop up your vegetables. Chop and slice into your ideal sizes. Make sure you beetroot is chopped up into small pieces as this takes a while to cook through. You can either steam your beetroot or add it to the pan before your other ingredients. Heat a medium sized pan on medium heat and add your oil and vegetables (beetroot first if you are cooking it this way) with a little bit of salt and pepper. Reduce the heat and allow for the vegetables to cook through.

3. Now it's time to do a bit of multi-tasking! In a seperate pan on a low to medium heat, add your tempeh and cook until the sauce is absorbed and the tempeh is starting to golden.

4. Once everything is cooked, it is time to assemble your salad! I added some tomato and cucumber also so feel free to add in any fresh veggies. Enjoy!



This is a great salad to have during winter and it is nice and filling. It is also a good one as you can mix up whatever vegetables you add to it!
