Macadamia, Coconut and Date Butter

Bit of a handful of a name but this macadamia, coconut and date butter is super yummy and is a different take on your usual nut butter! Its is a fun way to mix things up and will take your meals to the next level! I love to add it to porridge, have it on rice cakes, serve with granola and fresh fruit or have it with a chia pudding. I also would love to have it with some banana bread - honestly the options are endless!!

Ingredients:
- 2 cups macadamias, lightly roasted
- 3/4 cup coconut chips, lightly roasted
- 2 large medjool dates, very soft or soaked in boiling water
- 1 tsp vanilla extract
- Pinch of salt

Instructions:
1. Begin by lightly roasting the macadamias and coconut chips for a few minutes - keep and eye on them because they will burn fast! Allow them to cool for a few minutes
2. Add the macadamias and coconut chips to a food processor and blend until they begin to turn into a paste. Once the blend is pretty much smooth, add in the rest of your ingredients and blend until completely smooth (be patient).
3. Store in a glass jar and keep in the pantry. Enjoy!
