Lamington Bliss Balls

I am completely obsessed with bliss balls and i think by having at least one every day, i have become a bliss ball snob. Anyone else!? But these bliss balls have to be one of my favourites! And if my word isn't enough, just know that they didn't last very long in the household!
The flavour, texture AND smell all remind me so much of actual kiwi classic lamingtons. They have the perfect amount of chocolate with cacao powder and hazelnuts and are sweetened with soaked medjool dates and a bit of maple syrup, giving them a fudgy yet light texture. So if you love chocolate, coconut and raspberries this is the perfect thing for you!

Ingredients:
- 1 cup almond meal
- 1/4 cup hazelnuts
- 1/4 cup desiccated/shredded coconut + an extra 1/4 cup for coating
- 1/4 cup cacao powder
- 2 scoops chocolate protein (25g) (can skip or sub for more cacao powder!)
- 4 medjool dates, soaked
- 1 tbsp maple syrup (can add in 2 tbsp if you want them extra sweet!)
- 1 tsp vanilla extract
- 1/3 cup frozen raspberries, mashed
Instructions:
1. Begin by soaking your dates in boiling water.
2. While your dates are soaking, add all of your dry ingredients to the food processor or blender. Blend until combined and the nuts are crushed down into a flour (leave a few chunks if you like!).
3. Now add your soaked dates, maple syrup and vanilla extract to the mix. Blend until well combined.
4. To make the bliss balls, get a small amount of the mixture and flatten it out. Add in a small bit of your mashed raspberries to the middle to create the jam filling. Now add a little bit more bliss ball mixture to the top of this and roll our your bliss ball around the jam to create your ball. NOTE: the jam may squeeze out of some cracks but that won't matter once you coat it in the coconut!
5. Once you have all your bliss balls, roll them in the desiccated coconut and store in the fridge!
