Green Goddess Bowl

If you feel like you're struggling to get some greens in then this is the perfect bowl for you! It is super tasty and perfect at any time of the year for lunch or dinner! Feel free to add in any other greens too (zucchini would also be yummy) as well as mixing up your protein if you like (chicken is super yum cooked in pesto)! ENJOY!

Ingredients:
- Handful of spinach
- Sliced cucumber
- Handful of peas
- Broccoli (about a half)
- Leek, sliced
- Minced garlic (a few teaspoons to cook your leek and broccoli in)
- 1 block of firm tofu (baked in the oven at 200 degrees celsius for around 20 minutes in coconut aminos or tamari, salt and pepper)
- Pesto (around 1 - 2 tbsp)
- Avocado, sliced

Instructions:
1. Begin by preparing all of your veggies
2. Add your sliced leek and broccoli florets to a pan on a low to medium heat along with coconut aminos and a few teaspoons of minced garlic and cook until soft. To get them crispy, turn the heat up to high at the end for a few minutes or until crispy.
3. For your pre-cooked tofu, add this to a pan on a low to medium heat along with extra coconut aminos and plenty of pesto! Cook for around 5 minutes
4. Next assemble your bowls! Start with your spinach as a base and spread the rest of your ingredients on top!
