Gingerbread Muffins

Healthy, easy and delicious gingerbread muffins!!! These are so light and fluffy and will make your kitchen smell divine! Enjoy!

Ingredients:
- 2 cups oat flour (ground up oats)
- 2 eggs
- 1/2 cup coconut sugar (or brown sugar)
- 1/4 cup coconut oil, melted
- 1/4 cup yoghurt (I used The Collective Skyr yoghurt - make sure it's on the thicker side)
- 3/4 cup milk (I used oat milk)
- 5 tsp ginger powder
- 2 tsp cinnamon
- 1 tsp vanilla extract or powder
- 1 tsp baking powder
- 1 tsp baking soda
- Pinch of salt
Instructions:
Preheat your oven to 180 degrees celsius and line muffin tins (I got 10 muffins out of the mixture)
In a large mixing bowl, mix your dry ingredients together (oat flour, spices, baking soda and baking powder)
In a seperate bowl, mix together your wet ingredients (eggs, coconut sugar, coconut oil, yoghurt, milk, vanilla and salt). Add this mixture to your dry ingredients and mix until everything is combined
Spoon your mixture into your muffin tins and top with extra oat, buckwheat or nuts if you like.
Bake in the oven for 20 minutes, or until a skewer comes out of the muffins clean. Store in an airtight container and enjoy!
