Christmas Banana Bread w/ Spiced Walnut Crumble

A Christmas take on your classic banana bread - all i can say is yum!!! This recipe is a perfect one for Christmas day and will be loved by the whole fam!

Ingredients:
- 1 3/4 cup wholemeal spelt flour (or regular wholemeal flour or regular spelt flour)
- 1 cup mashed ripe bananas
- 2 large eggs
- 1/3 cup maple syrup
- 1/3 cup coconut oil, melted
- 1/4 cup milk (I used oat milk)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp nutmeg
- Pinch of salt
- 2 tsp baking powder
Walnut Crumble:
- 3/4 cup crushed walnuts
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1 tbsp maple syrup

Instructions:
Preheat your oven to 180 degrees celsius
Prepare your walnut crumble by mixing your crushed nuts with the spices and maple syrup and set aside
Begin by mashing your bananas. Once mashed, add in the rest of your wet ingredients (eggs, maple syrup, coconut oil, milk, vanilla) and mix.
In a large mixing bowl, mix together your dry ingredients (flour, spices, baking powder and salt). Add in your wet ingredients and mix until combined
Pour your mixture into a lined/greased loaf tin and bake in the oven for around 50 minutes. Take out and allow to cool on a cooling wire completely before slicing. Enjoy!!
