Easy Pasta Salad

Pasta is such a great way to get up your veggie intake because you can sneak so many veggies into it and it still tastes so good! This pasta salad is super easy and you can always mix up the veggies in it. It is also super yum fresh out of the pan but also the next day!

Ingredients:
- 1 cup penne pasta
- 1 courgette, sliced
- 8/handful of swiss brown mushrooms, sliced into quarters
- Handful of cherry tomatoes, cut in half
- Handful of spinach
- 1/2 red onion, sliced thinly
- Sprinkle of toasted pine nuts (toasting them takes it to the next level!!!)
Dressing:
- 1 tbsp olive oil
- Juice of 1/2 a lemon
- 1 heaped tsp garlic
- 1 tsp apple cider vinegar
- 2 tsp coconut aminos/tamari
- 1/2 tsp turmeric
- Salt and lots of pepper
Instructions:
1. Begin by cooking your pasta by following the instructions on the back of the packet.
2. While your pasta is cooking, chop all of your veggies.
3. Heat a pan on a low to medium heat and add your oil and onion. Simmer for 2 minutes and then add the rest of your veggies besides the cherry tomatoes and spinach. Add your dressing ingredients now and cook for 5-10 minutes.
4. When your pasta is finished cooking, drain it and add to the pan with your veggies. Mix and enjoy hot or for lunches throughout the week!
