Crumbed Fish & Chips

Theres something about fish and chips that just reminds me of my childhood and summer here in NZ! It's definitely a classic so i decided to make my own homemade version. Am super happy with how it all turned out and know that i will be having this a lot. It is perfect to enjoy on a warm summers evening so i would definitely recommend giving it a go! Especially because it is super easy to make and so so delicious!

Ingredients:
- 2 large fish fillets
- 1 egg
- 3/4 cup almond meal
- 3 tbsp desiccated coconut
- 1 tsp garlic salt (I used a smoky garlic salt)
Chips
- 2 large white potatoes
- 1 medium - large sweet potato
- Drizzle of olive oil
- Salt, pepper & chilli flakes
Lemony Dressing
- 2 heaped tbsp coconut yoghurt
- Juice of 1/2 a small lemon
- 1 tsp minced garlic
- 1/2 tsp apple cider vinegar
- Pepper

Instructions:
1. Preheat your oven to 200 degrees celsius
2. Make your dressing my adding all ingredients until a bowl and mixing together. Place aside.
3. Cut your potatoes/sweet potatoes into chips. Drizzle over olive oil and add the salt, pepper and chilli flakes. Place in the oven for 20 - 25 minutes once it has heated up.
4. While your chips are cooking, prepare your fish. In a bowl add the almond meal, coconut and garlic salt and mix together. In a seperate bowl, whisk your egg.
5. To coat your fish, add it into the egg mixture and make sure it is evenly coated. Next, place the fish into your 'crumb' mixture until evenly coated. Repeat until you are finished.
6. Heat a pan on a low to medium heat and cook your fish with a drizzle of olive or coconut oil. Serve hot with your chips, dressing and some salad. Enjoy!
