Cookie Dough Granola

Cooke dough granola, do I need to say anymore!? So happy with how this turned out - i am completely obsessed with it and have been having it multiple times a day! Perfect to add on top of smoothie bowls, yoghurt, weetbix, porridge or to just snack on! It has delicious clusters throughout and the chocolate adds even more goodness!

Ingredients:
1 1/2 cup rolled oats
1 1/2 cup chopped nuts (I used cashews, pecans and walnuts)
1/2 cup slivered almonds
1/3 cup desiccated coconut
1 tsp cinnamon
1/2 cup almond butter
3 tbsp maple syrup
2 tsp vanilla extract
1-2 tbsp plant based milk (I used oat)
Dark chocolate to mix in afterwards
Instructions:
Preheat the oven to 160 degrees celsius
In a large mixing bowl, mix together all of your dry ingredients (oats, nuts, coconut and cinnamon) until the cinnamon is spread throughout the mix
Add in all of your wet ingredients and mix together well until everything is combined and sticky.
Press this mixture tightly onto a lined baking tray so that the granola is sticking together (this will help ensure clusters! - shown in the photo above). Place in the oven for 20. After 20 minutes, gently mix the mixture (trying to keep clusters) to allow for the whole mixture to get golden, and bake for a further 7 minutes, or until golden.
Remove the from the oven and allow to sit and cool. Once completely cool, chop up your dark chocolate and mix into your granola. Store in an airtight container and keep in the pantry. Enjoy!
