Cookie Bars

You honestly just can't go wrong with cookies! So here is a fun way to mix your usual choc chip cookies up - make it into a slice/bars! Just as easy to make, if not easier since you don't have to roll the mixture into individual cookies! The outside is nice and crispy with the most amazing gooey inside that will make you drool! Enjoy!!!

Ingredients:

  • 2 cups almond meal

  • 1 egg

  • 1/3 cup coconut sugar or brown sugar

  • 1/3 cup almond butter

  • 1/4 cup melted coconut oil

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/4 tsp baking soda

  • Pinch of salt

  • Chocolate chips

Instructions:

  1. Preheat your oven to 180 degrees celsius

  2. In a large mixing bowl, mix together your almond meal, cinnamon, baking soda and salt.

  3. In a seperate bowl, mix together your egg, melted coconut oil, coconut sugar, almond butter and vanilla extract. Once all combined, add this wet mixture to the dry ingredients and mix until fully combined. Mix the chocolate chips through at the end.

  4. Press this mixture tightly into a lined tray and bake in the oven for around 18 minutes or until golden and crispy on the outside. Remove from the oven and allow it to cool completely in the baking tray before removing and cutting into squares. This allows for it to hold together. Keep stored in an airtight container either in the fridge for a couple of days or in the fridge for up to a week. Enjoy!
