Coconut Macadamia Cups

I feel like macadamias are underrated (especially roasted ones) so i've made these coconut macadamia cups! The macadamias pair perfectly with the almond and coconut base and are even better topped off with a drizzle of chocolate! White chocolate would always work great with this recipe too!

Ingredients
Base:
- 1 cup almond meal
- 1/2 cup desiccated coconut
- 1/4 cup cashew or almond butter
- 5 large and soft medjool dates
- 1 tsp vanilla extract
- 1/2 tsp maca powder (optional)
Topping:
- Crushed roasted macadamias
- 50g dark chocolate, melted
Instructions:
1. To make your base, add all of your base ingredients into a blender/food processor. Blend until well combined. Press this mixture into small muffin tins to create your cups.
2. Press a small amount of your roasted macadamias on top of your cups and place in the fridge
3. Once your cups are cooled, take them out of the muffin tins and melt your chocolate. Drizzle this on top of your cups and place back in the fridge on a plate or in a container. Keep stored in the fridge and enjoy!
