Coconut Caramel Chocolate Bars

These remind me of a mix of bounty bars and milkyway bars but couldn't decide on which they were more like, so here we have my coconut caramel chocolate bars! These are super yummy and remind me so much of having a chocolate bar as a kid!
They are nice and chewy and pair perfectly with the chocolate coating! So here's the recipe; hope you love it!!

Ingredients:
- 1 cup shredded coconut
- 1/2 cup coconut flour
- 1/3 cup almond flour
- 8 medjool dates, soaked in boiling water
- 1 tsp vanilla extract
- 1 block of dark chocolate, melted
Instructions:
1. Begin by adding all of your dry ingredients to a food processor. Blend until a flour like mixture if formed.
2. Now add in your soaked medjool dates and vanilla extract. Blend until well combined
3. Shape your mixture into small bars and place these into the fridge or freezer
4. While your bars are setting, melt your chocolate. Coat your bars in the chocolate and place back in the fridge to set completely. Keep these stored in the fridge.
