Chocolate Hazelnut Cookies

Calling all chocolate lovers!!!! If you are looking for a delicious sweet treat then you have come to the right place!


These cookies are so delicious! They are nice and crunchy on the outside and the inside honestly just melts in your mouth! You also get the occasional crunch from a hazelnut piece and some extra chocolate goodness from the dark chocolate pieces! They are super easy to make so i definitely recommend giving this recipe a go if you are wanting to mix things up from your usual choc chip cookies.



Ingredients:

- 3/4 cup almond meal

- 1/2 cup hazelnuts, or hazelnut meal + extra crushed hazelnuts to add in at the end

- 1/3 cup cacao powder

- 1/3 cup coconut sugar

- 1/3 cup coconut oil, melted

- 1 egg

- 3 tbsp nut butter (i used choc hazelnut - almond butter would also work well)

- 1 tsp vanilla extract

- 1 tsp baking powder

- Pinch of salt

- Dark chocolate



Instructions:

1. Preheat your oven to 160 degrees celsius

2. Begin by turning your hazelnuts into hazelnut meal by blending it in a food processor. Once ground, add in your almond meal and cacao powder and blend to combine.

3. Add in the rest of your ingredients to the food processor and blend until everything is evenly combined. Mix in your extra hazelnut pieces and dark chocolate.

4. Roll your mixture into balls and flatten onto a lined baking tray. I got 9 cookies from the mixture.

5. Place the cookies in the oven and bake for around 15 minutes. Keep an eye on them so that they don't burn! Store in an airtight container once they have cooled and enjoy!
