Choc rice crispy treats!

With everyone getting back into routine with school, uni and work i thought it would be a good time to create this recipe for a sweet treat to have on the go, for morning tea or as an afternoon pick-me-up! These are great to keep in the fridge or freezer to quickly grab as you head out the door!
The nice crunchy chocolatey base with a hint of freeze-dried raspberry is paired with a smooth and creamy chocolate ganache on top. The combination of these ingredients is perfect to satisfy your sweet tooth and keep you going! They are super easy to make although may require you to get your hands a bit messy but that adds to the fun of it i reckon haha

Rice Crispy Ingredients:
- 3 cups puffed rice
- 1 cup puffed quinoa (can just use an additional cup of rice puffs)
- 10 medjool dates, soaked in boiling water for 5 minutes
- 1/2 cup almond butter
- 1/4 cup cacao powder
- 1 tsp vanilla extract
- 2 tsp maple syrup
- 2 tbsp coconut cream
- optional: 1/2 cup freeze-dried raspberries
Chocolate Ganache Ingredients:
- 160g dark chocolate
- 1 cup coconut cream
Instructions:
1. Add the soaked dates, almond butter, cacao powder, vanilla extract, maple syrup and coconut cream into a food processor or blender. Blend until smooth
2. In a bowl, combine your rice puffs and puffed quinoa with your date mixture. This may get a bit messy and you might need to use your hands to ensure everything is evenly combined!
3. Once all your puffs are coated, press firmly into a tray and place into the freezer while you make your chocolate ganache
4. To make your ganache, place the coconut cream into a pot and heat on the stovetop. Once simmering, remove from the heat and add the chocolate to the mix. Allow it to sit for a minute or two before stirring. Once they are combined, leave the mixture to cool for 5 minutes before adding on top of your rice crispy mix. Place back into the freezer for half an hour or until the chocolate layer has set. Cut into your desired sized squares and enjoy!
