Choc Quinoa Bark

This is a super easy, delicious and nutritious treat to have handy in the fridge or freezer! It's also highly addictive so lucky it makes a decent amount haha. This slice is made with nut butter (I used almond but i reckon peanut butter would be just as nice!) and sweetened with maple syrup! It has a perfect balance of flavours and textures that'll get you addicted! Hope you enjoy!

Ingredients:
1 cup puffed quinoa (could also use cooked quinoa!)
1/2 cup desiccated or shredded coconut
2 tbsp seeds (I used sesame. Can also use chia, sunflower, pumpkin etc.)
1 tbsp cacao nibs
1/4 cup goji berries (can also use raisins or cranberries)
2 tbsp cacao powder
1/4 cup almond butter (heaped) or another nut butter
1/4 cup maple syrup or another sticky sweetener
1 tsp vanilla extract
100g dark chocolate, melted
Freeze dried raspberries to top
Instructions:
In a large mixing bowl, add all of your dry ingredients (puffed quinoa, coconut, seeds, cacao nibs, goji berries and cacao powder) and mix
Add in your wet ingredients (nut butter, maple syrup and vanilla extract) and mix until everything is combined and sticking together
Press this mixture onto a flat tray lined with baking paper. Press it together tightly and place in the fridge to set
While the bark is setting in the fridge, melt your chocolate. Pour this on top of your bark, sprinkle with freeze dried raspberries or any other toppings and place back in the fridge to set.
Once your bark has set, break it up into small chunks. This is a delicate slice so you may need to press it together again on the sides. Keep it stored in the fridge or freezer!
