Choc Mint Slice!

I love the flavour choc mint and thought i would create this classic flavour combo into a indulgent slice! It's the perfect treat after dinner but also just for anytime of the day. This slice is refined sugar free, dairy free and gluten free (just like most of my baking)!
It actually took me a couple of goes to get the filling right but i'm so happy with how it has turned out! It has a nice chocolatey base, a smooth filling of both mint and chocolate and then some more chocolate drizzled on top (can never have too much chocolate!!).

Ingredients:
Base:
- 1/2 cup almonds
- 1/2 cup oats (can also just use more almonds)
- 8 medjool dates, soaked
- 1/3 cup cacao powder
- 1 tsp vanilla extract
- 2 tbsp cacao nibs
Peppermint layer:
- 1 cup cashews, soaked overnight
- 1/4 cup coconut oil, firm
- 3 medjool dates, soaked
- 1 tsp peppermint oil
- 4 tbsp coconut milk
- 1/4 tsp spirulina powder
Chocolate layer:
- 3/4 cup cashews, soaked overnight
- 2 tbsp coconut oil
- 4 tbsp coconut milk
- 2 tbsp cacao powder
- 2 medjool dates, soaked
Choc top:
- 80g melted dark chocolate
Instructions:
1. Start by making the base. Blend your almonds and oats into a flour. Add in the rest of your base ingredients and blend until everything combines. Press into a lined tray and place in the fridge or freezer while you make your filling.
2. Add all peppermint layer ingredients into a food processor and blend until smooth. Either spread all of the mix out on top of your base or just half of it and save the other half to go over your chocolate layer. Freeze.
3. Add all chocolate layer ingredients into the food processor (it is best to wash it out beforehand so you don't mix it with the green) and blend until smooth. Spread out on top of your peppermint layer. If you have saved your other half of the peppermint layer, add this on top of the chocolate layer now. Freeze for around 30 minutes.
4. Melt your chocolate and add on top of the slice! Keeps best in the freezer!
