Choc Coconut Slice!

I love to try and re-create classic treats and make them into a raw slice so after experimenting in the kitchen i came up with this one! This is such a yummy slice that reminds be a bit of a bounty bar but with a bit less coconut and even more chocolate!


If you are a chocolate lover then this slice is perfect for you! It has a chocolate coconut base with a thick fudgey chocolate layer (has to be the best part), coconut and even more melted chocolate. This treat is perfect for the whole family or to save all for yourself!




Ingredients:

Base:

- 1 cup almonds

- 1/2 cup shredded coconut

- 1/3 cup rolled oats

- 5 medjool dates, soaked

- 2 tbsp coconut milk

- 1/3 cup cacao powder

- 1 tsp vanilla extract

- 2 tbsp cacao nibs


Choc Filling:

- 14 medjool dates, soaked

- 1/3 cup cacao powder

- 1 tsp vanilla extract

- 2 tbsp maple syrup


Coconut Layer:

- 1 cup shredded coconut


Chocolate Layer:

- 80g dark chocolate



Instructions:

1. Begin by blending your almonds, coconut, oats and cacao powder in a food processor. Once a chunky flour has formed, add in the rest of your ingredients and blend until combined. Press into a lined tray and place in the freezer.

2. For the filling, blend all of your ingredients in a food processor until smooth. Spread out onto your base and place back in the freezer.

3. To make the coconut layer, blend the coconut until it breaks down and is fine. Make sure you don't over-blend this. Make a thin layer on top of the slice and place back in the freezer.

4. Melt your chocolate and drizzle on top of your slice. Leave it to set in the freezer and cut once the chocolate has hardened.
