Iv'e always loved biscuits and growing up whenever we went to visit friends or family we always brought around some biscuits! One of my favourites was the chocolate thins so i decided to do something similar to those! These biscuits are super easy to make and i am obsessed with them! They are nice and crunchy/crumbly like a biscuit and i can easily eat the whole lot in one go. Hope you enjoy!

Ingredients:

- 1 cup almond meal

- 3 tbsp coconut oil, melted

- 2 tbsp maple syrup

- 1 tsp vanilla extract

- Pinch of salt

- 100g dark chocolate, melted

Instructions:

1. Pre heat your oven to 180 degrees celsius

2. In a bowl, add in all of your ingredients (besides the chocolate) and mix until a dough is formed

3. Press your mixture into small, flat circle cookies and bake in the oven for 12 - 14 minutes or until golden

4. Allow the cookies to cool COMPLETELY before melting your chocolate and cooking the cookies in it. Place in the fridge to set. Keep stored in an airtight container (best kept in the fridge too). Enjoy!
