Chia pudding is such an easy and yummy breakfast! I love to make it when i'm not going to have enough time to put together a good breakfast in the morning. It also doesn't require too many ingredients which is always a bonus.

This one is especially yummy with the added almond butter (can also replace for peanut butter)! It's like having dessert for breakfast yet is full of so many nutrients.

Ingredients:

- 3 tbsp chia seeds

- 1 + 1/4 cup almond milk/milk of choice

- 2 tbsp almond or peanut butter

- 1 tbsp cacao powder

- 1 tbsp maple syrup

- 1 tsp vanilla extract

- Toppings: berries, banana, cacao nibs

Instructions:

1. Begin by mixing your chia seeds and milk together. Once these are combined, add in the rest of the ingredients and whisk/mix with a fork (this makes it a lot easier for the cacao powder to mix through).

2. Place in the fridge overnight or for at least 30 minutes to an hour before eating. Top with anything you like such as berries, banana and cacao nibs. Extra almond butter always is very yummy.

If you make this make sure to take a picture and tag on on instagram at @shannons.plate! I would love to see some re-creations!
