Chickpea Crepe

Needing a bit more lunch/dinner inspiration? Well i have the perfect thing for you!
Recently i have been obsessed with chickpea pancakes paired with lots of different goodies! This is the perfect thing to make and have with whatever you have in the fridge. You can also make up this mix and use it all at once or to keep in the fridge. I have done it both ways and they turn out exactly the same!
All you need is 4 ingredients (including water and some spices), a pan and something to flip it with so it couldn't get much easier than that!

Ingredients:
- 1 cup chickpea/besan flour
- 1 cup of water
- 1 tbsp olive oil
- Your choice of spices! I love curry powder, turmeric and garam masala
Method:
1. In a bowl, add your flour and make sure it has no lumps before adding in all other ingredients. Mix well.
2. Heat a pan on a low to medium heat before adding a small amount of the mixture. Tilt your pan to spread the mix and make a circle shape. Make sure you don't pour on too much so that it's not to thick! (However, if you want more of a pancake, then you may need to use a bit more!)
3. It doesn't take very long to make so keep an eye on it! Cook for roughly 1-2 minutes on each side before removing and serving it with whatever you like!
A few of my favourite serving options:
- Smashed falafel
- Scrambled egg
- Fresh salad
- Baked tofu, eggplant and cauliflower
- Baked kumara (roasted in olive oil, curry powder, salt and pepper)
- Spiced chicken, beef or turkey mince along with some mushrooms
- Cauliflower, mushrooms and kale cooked with a bit of curry powder and olive oil
I hope this recipes gives you a bit of inspiration if you're in a rut. You can always alternate your spices to go with whatever you're serving it with so it's perfect for anything really.
