Chickpea and Weetbix Blondies

This may sound like a very random combo but it is honestly SO good!! The weetbix and chickpeas make it the perfect fudgy treat and you can't even taste them! These are also super easy to make as you pretty much just throw everything into a blender and then into the oven! So let’s get straight to this delicious recipe!



Ingredients:

- 1 can chickpeas, drained and rinsed well

- 3 weetbix

- 1/3 cup almond butter

- 1/3 cup maple syrup

- 1 tsp vanilla extract

- 1 tsp baking powder

- 1-2 tbsp of water to thin it out

- Pinch of salt

- 80g dark choc



Instructions:

1. Pre heat your oven to 180 degrees celsius

2. Blend the weetbix into a flour in a food processor. Now add dd the rest of the ingredients and blend until all the ingredients well combined and there are no chunks. If the mixture is too thick, add a dash of water. Mix through your chocolate chunks at the end

3. Press your mixture into an ovenproof dish and place in the oven for around 30 minutes. Allow to cool for a bit before cutting it. Store in the fridge.
