Chickpea and Carrot Burgers

This is such a fresh, delicious and easy recipe that is going to leave you nice and satisfied! These are super yummy and are great for meal prep as you can mix up what you're having it with to keep things interesting. These can be made into little falafels and enjoyed in a bowl or pita pocket. Get creative with it because they are so versatile!

Ingredients:
- 1 can chickpeas
- 1 carrot, grated
- 1/2 red onion, chopped
- 2 tsp garlic
- 2 tsp ground coriander (fresh would also work really well!)
- 1 tsp cumin
- 1 tsp mixed herbs
- 1 tbsp tahini

Instructions:
1. Preheat your oven to 180 degrees celsius
2. Chop up and grate your red onion and carrot, adding them into the food processor with the rest of your ingredients. Blend until combined. You may need to add some water/liquid to help it blend easier.
3. Roll your mixture into 5 burger patties, place on a baking tray and put in the oven for around 30 minutes. Flip half way through.
