Cashew Cookie Bliss Balls

A day doesn't go by where i don't have a bliss ball (or 5) so i always love coming up with yummy new flavours! This cashew cookie one is super yummy, easy to make and doesn't require too many ingredients! Cashews are also one of my favourite nuts (they have to be roasted though haha) so these bliss balls have to be one of my faves!

Ingredients:

- 1 cup roasted cashews

- 1/2 cup rolled oats

- 1/4 cup desiccated coconut

- 1/4 cup cashew butter

- 6 large medjool dates (make sure they are soft)

- 1 tsp vanilla extract

- 1 heaped tbsp buckwheat to mix in at the end


Instructions:

1. Begin by blending your cashews, rolled oats and coconut together until it is all ground up.

2. Add in the cashew butter, dates and vanilla and blend until everything is combined. Once combined, mix in your buckwheat with a spoon.

3. Now roll your mixture into balls, keep stored in the fridge and enjoy!
