Carrot Cake Muffins

It has taken me a while to perfect my muffin recipe and i am so happy with how these have turned out! They are light, fluffy, moist and most importantly delicious! They are also easy to make and are the perfect snack (you are also getting one of your five a day if you want to think of it like that hahaha). Hope you enjoy!

Ingredients:

- 1 cup almond meal

- 1/2 cup oat flour

- 2 eggs

- 3/4 cup grated carrot

- 1/4 cup maple syrup

- 1/4 cup coconut oil, melted

- 1/4 cup yoghurt (I used a vanilla bean dairy yoghurt and it worked well!)

- 1 tsp vanilla extract

- 1 tsp cinnamon

- 1/2 tsp nutmeg

- 1/2 tsp ginger powder

- Pinch of salt

- 2 tsp baking powder

- Small handful of raisins and chopped walnuts

Instructions:

1. Preheat your oven to 180 degrees celsius

2. In a large mixing bowl, mix together your flours, spice, baking powder and salt.

3. In a separate bowl, mix all of your wet ingredients (eggs, carrot, maple syrup, coconut oil, yoghurt and vanilla extract). Add this to your dry ingredients and mix until combined. Fold in the raisins and walnuts at the end.

4. Add your mixture into a muffin tin (either lined or greased with oil). I got 9 muffins. Place in the oven and bake for 15-20 minutes.
