Cajun Chicken & Tomato Pasta

Cajun would have to be one of my favourite flavours because it goes with just about anything! I love to have it with chicken, fish, kumara, chickpeas and now this delicious pasta dish!

Ingredients:
- Your choice of pasta (I used Mung Bean and Edamame Fettuccine)
- 3 - 4 chicken tenderloins, cut into chunks
- Your choice of pasta sauce (I used Jamie Oliver's one)
- Your choice of veggies. I used; mushrooms, red onion, kale, cherry tomatoes and leek
- Coconut aminos and Cajun spice mix to cook your chicken and veggies in

Instructions:
1. Begin by cooking your pasta according to the instructions on the packet. While your pasta is cooking, cut up your chicken tenderloins and chop up your vegetables so that they are ready to cook. Once your pasta is done, drain it, rinse with some water and set aside.
2. Using a pan on medium to low heat, cook your chicken in coconut aminos or your choice of oil and cajun spice mix. Add your cut up veggies to the mix to cook when the chicken is just about done (add more coconut aminos/oil and spice if needed)
3. Once your veggies are cooked, add in your pasta sauce to the pan (again, any more cajun spice mix if you want) as well as pasta until everything is heated.
4. Serve straight away and enjoy! If you have any leftovers, store them in an airtight container and have it for lunch or dinner the next day - it's just as tasty!
