Black Forest Bites

Black forest has to be one of my favourite chocolate flavours so this was a hit! It has the crunch from rice crispes and buckwheat and the chewiness from goji berries, cranberries and raisins. Definitely the perfect treat to keep in the fridge and just pop into your mouth when you're on the go or are wanting something sweet!

Ingredients:
- 1 cup rice crispies/puffed rice
- 1/2 cup buckwheat
- 1/2 cup goji berries
- 1/4 cup cranberries and/or raisins
- 1/4 cup cacao nibs
- 1 cup medjool dates, soaked
- 1/4 cup almond meal
- 1/4 cup cacao powder
- 1/4 cup coconut butter or coconut oil
- 1 tsp vanilla extract
- 1/4 cup maple syrup or your water from your soaked dates
Instructions:
1. Soak your dates in boiling water for 10 minutes
2. In a bowl, mix together your rice crispies, buckwheat, goji berries, raisins/cranberries, and cacao nibs.
3. Add your soaked dates to a food processor along with the almond meal, cacao powder, coconut butter/oil, vanilla and maple or water.
4. Add your sticky mixture to the bowl with your dry ingredients and mix together well. Press this mixture into a dish and place in the fridge for around half an hour to set. Slice into little bites and enjoy!
