Banana Cinnamon Pancakes

These pancakes are SO easy to make - requiring minimal ingredients and take less than 15 minutes to make up. Not to forget how yummy they are too!! They are super light yet filling and make for the perfect breakfast!

Ingredients
- 1 large banana, mashed
- 2 small eggs
- 1 - 3 tbsp buckwheat flour (depending on how runny your mixture is)
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
Instructions
1. Begin by mashing your banana and whisking your eggs together. Then add in your cinnamon and vanilla and mix.
2. Add your flour (can vary depending on how runny your mixture is) and baking soda. Mix until everything is combined well.
3. Heat a pan on a low to medium heat and add some coconut oil to the pan to cook your pancakes with. I did 3 small to medium sized pancakes at a time and kept the cooked ones in the oven on a low heat to ensure they stayed nice and warm.
4. Serve with whatever you like. I had mine with vanilla yoghurt, frozen mixed berries, goji berries, cacao nibs and peanut butter!
